Tater Tot Nachos

Ingredients
  

  • 1 bag frozen tater tots about 28–32 oz
  • 2 cups shredded cheese cheddar or cheddar-jack
  • 1 cup cooked ground beef or 1½ cups seasoned black beans optional
  • ½ cup pico de gallo or diced tomatoes + onion
  • ½ cup sour cream
  • 1 avocado diced or mashed
  • ¼ cup sliced green onions
  • Optional add-ons: pickled jalapeños corn, black olives
Quick "Idaho Sauce"
  • cup sour cream
  • 2 tbsp mayo
  • 1 tbsp ketchup
  • 1 tsp pickle juice or a splash of vinegar
  • Pinch garlic powder + pepper
  • Mix until smooth.

Method
 

  1. Heat oven to 425°F.
  2. Bake tots on a sheet pan 25–30 minutes, flipping once, until extra crisp.
  3. Sprinkle cheese (and optional beef/beans) over hot tots. Return to oven 3–5 minutes to melt.
  4. Top with pico, avocado, green onion, and dollops of sour cream (or drizzle Idaho sauce).
  5. Serve immediately while they’re crunchy.
