Harbor Fish & Chips

Ingredients
  

Beer Battered Fish
  • 1 lb fresh cod or halibut fillets
  • 1 cup all-purpose flour for batter
  • ¼ cup cornstarch
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp Old bay seasoning
  • ¼ tsp paprika
  • 1 cup cold sparkling water or beer
  • ½ cup all-purpose flour for dredging
French Fries
  • 1 ½ lb russet potatoes
  • 1 qt vegetable for frying

Method
 

French Fries
  1. Cut russet potatoes into equal sized sticks. Rinse them with cold water, then dry them with paper towels.
  2. Fry fries at 350°F for 5–6 minutes, transfer them to a paper-towel-lined baking sheet or plate.
Beer Battered Fish
  1. Cut white fish into 8 even pieces and pat them dry with paper towels. Set aside.
  2. Combine all-purpose flour, cornstarch, baking powder, salt, ground black pepper, Old bay seasoning, and paprika in a medium bowl.
  3. Whisk in light beer until the batter reaches a thin pancake batter consistency.
  4. Toss the fish fillets carefully in the ½ cup all-purpose flour, then dip them each in the beer batter, allowing the excess to drip off.
  5. Gently add the battered fish to 375° oil in batches of 2-3 pieces at a time and fry for 6-8 minutes, flipping the fish halfway through until they are golden brown.
Serve with:
  1. Tartar sauce
  2. Lemon wedges
  3. Malt vinegar
