Method
- Cook the rice according to the instructions.
- In a large bowl, toss the onions with the lime juice, rice vinegar and a pinch of salt and pepper, then toss with the diced cucumbers. Let sit, tossing occasionally, 10 minutes
- Meanwhile, preheat a grill or pan over medium heat. In a small bowl, combine the oil, jerk seasoning and a pinch of salt. Rub the mixture all over the chicken. Grill until just cooked through, 4-5 minutes per side.
- Serve the cucumber salad over the rice, plus cilantro and lime wedges if desired.
