Caribbean Jerk Chicken

Caribbean Jerk Chicken with Cucumber Salad

Ingredients
  

  • 4 cups cooked rice
  • 1 small red onion diced
  • 2 tbsp lime juice
  • 2 small seedless cucumber diced
  • 1 tbsp olive oil
  • tsp jerk seasoning
  • 4 thin-cut boneless skinless chicken breasts (about 12 ounces)
  • 2 tbsp fresh cilantro roughly chopped
  • 2 tbsp rice vinegar
  • Kosher salt and freshly ground black pepper to taste

Method
 

  1. Cook the rice according to the instructions.
  2. In a large bowl, toss the onions with the lime juice, rice vinegar and a pinch of salt and pepper, then toss with the diced cucumbers. Let sit, tossing occasionally, 10 minutes
  3. Meanwhile, preheat a grill or pan over medium heat. In a small bowl, combine the oil, jerk seasoning and a pinch of salt. Rub the mixture all over the chicken. Grill until just cooked through, 4-5 minutes per side.
  4. Serve the cucumber salad over the rice, plus cilantro and lime wedges if desired.

  • 1/2 cup pineapple juice
  • 1/4 cup orange juice
  • 1 tbsp fresh lime juice
  • 1-2 tsp coconut cream for that Caribbean richness
  • 1/2 cup ginger non-alcoholic beer or ginger-ale adds bite + “spice of the sea”
  • 1-2 tsp grenadine syrup for that deep “sunset at sea” color
  • Splash of cola this gives it that darker “Black Pearl” look
  • Crushed ice

Method
 

  1. Fill a glass with crushed ice.
  2. Add pineapple juice, orange juice, lime juice, and coconut cream.
  3. Stir or shake lightly.
  4. Top with ginger beer or ginger-ale
  5. Slowly pour grenadine down the side for a layered effect.
  6. Add a splash of cola to deepen the color.
  7. Garnish like you’re impressing a pirate captain.
